(i.e. this thread on the main page has me posting at 00:10, yet when I click 'Website Feedback' in says 01:10)

It's a user setting - i.e., you need to set up your timezone (so if you're in the UK, now is GMT+0).
Click on "My Controls" at the top right of any page here; there, under the "Options" menu on the left, click on "Board Settings". You will be able to set your correct timezone there.
