Alain Prost has competed in bicycle racing. I know he did a stage at the Tour de France and recently has competed in mountain biking.

What's your source for that? I ask because it doesn't quite ring true - you can't just drop in, do one stage of the Tour, and go home.

He doesn't compete in the Tour itself, but is a regular entrant in L'Étape du Tour. This event allows amateur cyclists to have a go at one of the Tour stages, and usually runs a few days apart from the main event:

Ah, that makes sense - thank you! Not at all the same as actually competing in the Tour, but a formidable athletic achievement anyway.
Edit: am I correct in recalling that Michael Schumacher used to train with Tony Rominger?

Yes, I've read that he was experienced at that. He was also known to be quick with his fists, and good at picking fights
