Jonathan Thompson's "Ferrari Boxer" (the Ferrari flat-12 racing and GT cars) and "The Ferrari Formula 1 Cars, 1948-1976" books.
Meri Modelling Guide with Paolo Alessio "Ferrari 312 T"

Most books by Schlegelmilch contain good color pictures.
"Ferrari Mondiale" the Ferrari 1975 "yearbook"
would be my first steps to look at.

It depends what you're after really. For the full story I would say "Flat 12" by Alan Henry.
