Wasn't it just a factory seat pattern? I've seen 300SL's with factory plaid cloth seats, it wouldn't surprise me if the racing team would use the same fabric. Whether to provide a link to production cars, or because it was lighter or something, I don't know.
I don't have any books on the topic of Mercedes racing cars, and a quick shufti around the internet doesn't throw anything up.

Interesting, though, that according to Moss each works driver had his own colour seat cover.
