Giving it second thought, an MP4-25 at Elkhart Lake could possibly be mind blowing as well.

Provided I actually had the skills of top drivers and going around in those cars fast was not a problem, then I'd like to try:

The nimble Tyrrell 019 around the streets of Monaco.
The V12 powered Ferrari 412 T2 at old Hockenheim.

Two contrasting circuits is enough for me.

McLaren MP4/20 at the old Osterreichring.

...or maybe the MP4/16...or the MP4/4...or the MP4/7...or the early Ferrari 640...or the Brabham BT-55...

I'm going to echo one of the suggestions mentioned earlier and say Jag XJR-9 or a Sauber C9 around Le Mans as it was in 1989.

Good question. I would like to say a F2004 around the Nordschleife, but I would also like to survive. :) To be honest I haven't driven anything faster than a Gallardo and a Ferrari 430 on public roads, at no more than about twice the legal speed, so...

It becomes a matter of SUPER fast car on a boring (safe) track or something like a GT3 car on a nice track. But heck, let's go for an F2004 on some kind of airport track where I can't crash, just to feel that 900+ horsepower V10 engine. It's not hard to go fast in a straight line. :)

Another vote for the MP4/20 here, any track would do but preferably Spa.

Honourable mention to the R25, just for the sake of cranking on that much turn lock on turn in. Oh, and who needs 7 gears?

No contest for me. Ferrari 312 from 1967 around the Nordschleife.

Great choice! I would pick either that car or the 1966 BRM (I've always loved that car from the movie Grand Prix) and drive around the same circuit.

Less downforce at Talladega. Bill Elliott's Ford Thunderbird from '86 would be a much better candidate (or any NASCAR racer in the year or two before restrictor plates made their debut).

Surely Spa in dry conditions. Any car with good downforce. Perhaps V10s wouldn't be the most fun to drive but I would love the sound beneath me.

Wheres the fun in that, surely you would like a little rain, wouldnt be Spa without it

I was watching a practice session at the 2009 Belgium GP on TV with my girlfriend, the track had just gone quiet when Hekki drove out of the pits and I said to my girlfriend "there goes the luckiest man in the world, he's a F1 driver at Spa Francorchamps, he has the track to himself and he's driving a McLaren" so that would be fantastic, but after visiting the area in 2010 and 2011 I loved the old track so much that I would pick the 1968 McLaren M7A on the old 1968 spec track at Spa, and relive McLarens first F1 win.

I will take the Ferrari 312 B, but same track.

Nice choice too. :)

The reasons I chose the 1967 Ferrari are:
1) I am accustomed to non-aero cars and to learn a completely new concept (downforce) in the 8 minutes that one lap needs would be too much of a daunting task and would make the whole experience less enjoyable.
2) The Ferrari 312 was by far my favourite car in Grand Prix Legends. It would be sooo exciting to drive the real thing.

The track:

One lap? So it has to be good length to make it worthwhile, so let's say the Mille Miglia course. That's what I call a lap!

One car? I am too big to fit in most modern race cars and anyway who wants to contend with all those wretched buttons and paddles? So something with conventional controls, and something (as others have said) that I could actually cope with. So no stupidly inflexible engine with a 500rpm power band. Perhaps a nice classic rally car then, like the FIAT 131 Abarth Rallye (see avatar).

See from seeing what the sprint cars (which are designed to race at half mile tracks) can do around Bristol, I don't believe and IndyCar would be much quicker, if quicker at all.
