At 5:34, why Hunt take the bottle of the guy´s hands and threw it on the Mclaren´s wheel?

And why patrese is punching a guy in the crowd?

Well, it was the Seventies; the world was different then.

It may be somehow related to Hunt's steering problems in the race, caused by the spin we see in the film clip and a later bump with his team-mate Jochen Mass. This required a long pit stop to rectify. This might be why he then chose to chuck champagne (?) over it at the end of the race.

I'd guess the spectator shouted something derogatory at Patrese, who'd just spun off on Giacomelli's oil.

All right, not trying to be flippant this time: the Hunt footage is obviously from practice, as he ended the race somewhere in a gravel trap, if I remember correctly. They are obviously celebrating his pole position, hence the champers, and Hunt being Hunt... well, you know, the Seventies!

As for Patrese, he crashed out on an oil slick, and was obviously mad at the marshals for not showing the appropriate flags.

Yrs indeed, Michael - your suggestions sound a lot more logical than mine.
