It's a bit of a pointless exercise, if we already know the results. The better part of the fun of watching races is not knowing the outcome beforehand.
But yes, there are certainly some races that would be spectacular to relive just for the sights, sounds and smells of the racing machines - any of the pre-war GPs involving the Silver Arrows, some select Indy 500's from the 1950's, a few F1 races or Le Mans 24's from the 60's and 70's, mid-80's Group B rally cars...

I wsa lucky enough to see the Group B cars in rally and rallycross
But not to see the early turbo f1 cars, so maybe Brands in 83 or 84, pre silly aero and sticky tyres!

1991 French GP because it's the first motor race I ever watched on TV as a child.
Le Mans 2011/12/13/14/15 because after watching all 24 of the hours of each from the comfort of my room I'm regretting not taking myself there on my lonesome to be there :\

May 1st 1994. I would jump a fence, brive some dude, whatever just to cross the track walking while the race is on, anything just to stop the race for a while and change history.

Funny. I thought exactly the same but about April 7th, 1968. I would stealthily cut Jim's left and right tyre and say to Dave Sims: 'Say. That is a flat tyre at the back. And another one. Some vandal, I suppose.'
But ah. As Stephen King demonstrates in 22-11-1963, the past resists to change.

This is the sort of approach I would take if given some motorsport time travel powers - to go back and review all the old mysteries and myths to get to the truth.
This happens to be the exact 50th anniversary of one such example, where I would have to explain to the missus that I rejected her in favour of spending an entire night with Ed Hugus.

Good call, being in the McLaren pit at Silverstone in 1973 to give Jody Scheckter a firm kick in the balls just before the start also comes to mind.
