I only really know ones used in F1 past or present (going back to the mid-90s)
In no particular order, I like.
Istanbul
Spa (before they ruined the last sector)
Monza
Montreal
Interlagos
San Marino
Nurburgring
Hockenheim (before the changes)
Magny-Cours
Albert Park
I haven't included Suzuka but it did give me my favourite f1 moment (MSC 2000)

The old Zandvoort... before it was butchered... I had the incredible luck to be driven around it at alarming high speed in the old configuration. The sweeping corners, the elevations, the feeling you started to go up, up when you came out of Bos Uit and onto the straight... magic. The only footage I've seen that was comparable was the old Spa...
Apart from that: I was quite suprised that Jeremy Clarkson said after driving in Monte Carlo, that it would a fun track even if it would be in the desert somehow... can't imagine it myself, but perhaps he has a point...

I think that's a pretty comprehensive list.
EDIT: I did forget Mount Panorama. Swap it out with the Osterreichring if you'd like as it doesn't exist anymore. And Monza, which I'd probably swap with Road Atlanta, which remains for irrational favouritism reasons. Oh, and there's also Watkins Glen, as well--drop Suzuka for that one if you'd like.

Indeed the TT track on the Isle of Man is arguably the greatest track on the planet largely due to its length, difficulty and the sheer amount of balls you need to race it IMO.

3. Spa (before the bus stop chicane was destroyed)

7. Isle of Man (cannot say I know the track layout precisely, but having watched the race it is a monster)

Don't understand the love for that track, either. Dunlop curves are fun but the rest is definitely quite dull. I guess I'm just a bigger fan of corners and super long straights don't impress me much.Never ever Le Mans, its dull as dishwater and full of chicanes.

It's got a really nice flow and the cars get to stretch their legs properly. And the historical/novelty/romantic factor does matter a little bit. Like it far more than Monza which is a similar track but doesn't have the cadence of medium/quick corners at the start and end of lap that Le Mans does, also Monza's chicanes are a bit too tight and a pain to drive in sims.
I didn't include Pikes Peak and Isle of Man in mine, because the first isn't a circuit, the second isn't used by cars though I suppose it does qualify as a "race track".

Road courses only. I've biased it towards the ones I've seen make the best racing. Included Monaco cause I can watch F1 cars go around there for hours and still be enthralled.

Monaco For me, is the ultimate circuit. As a huge F1 gamer, how these drivers hold their concentration and lap this track at the speed they do is breathtaking. And becasue it's Monaco. It is Formula 1 for me.
My secret fetish, the A1 ring I know, I know, I should be shot. I just like the flow of it, might be an OCD thing of something.

Nice picks, I like the a1 ring too. The elevation changes and austrian country side looks nice. I wonder what it will look like in 2014.

I love both Nurburgrings.
Suzuka.. Monaco.. Imola.. Montreal.. Monza.. Spa.. Laguna Seca.. Silverstone.. Montreal.. Interlagos.. Bathurst.. and Kyalami but it doesn't get raced much these days.
Topics like this make me excited to be a racing fan. Lots of warm fuzzy feelings just from seeing the track names.
