I have to cheer for the car(s) with driver(s) I know IRL here.
However, there are a couple of entries that sticks out as somewhat more of a favorite than others in terms of line-up.
LMP:
#1 Rebellion. Kuba and Nikodem are absolutely brilliant on rF2 which will help.
#4 ByKolles, ByKolles eSports are a really good team and have been top four in all races of the Le Mans Virtual Series this season.
#8 R8G Esports have also been really good. Jajovski is a handy driver to have in that team.
#67 haven't done Le Mans Virtual this season, but it is a really strong team. Huis, Opmeer and with Juncadella as one of the Pro-drivers, Juncadella have always been a huge simracer, going back 10-15 years. That's a solid one.
#70 & #123 Redline. Redline are always really quick, but they are also prone to different issues. Again we see a massive simracer as a Pro-driver (Verstappen).
GTE:
#55 BMW Team GB, this team... Both Pro-drivers are absolute top simracers. Trogen having several podiums in top splits in big iRacing events, and iRacing RX Champion. While Setsaas has been doing the Porsche Supercup World Championship thing on iRacing the last two years. Both are from iRacing though, which may cause some hiccups. But that's a heck of a lineup.
#71 Team Redline, again Redline is a contender, they also have an amazing simracer as a Pro-driver. Rudy van Buren. The first ever winner of McLaren World Fastest Gamer, which was on rFactor 2. A really good line-up here as well.
#88 Proton Competition, may not have the biggest names but have done really well in the Le Mans Series so far.
#91 & #92 Porsche Esports Team. This is basically VRS Coanda Simsport. The #91 have Mitchell deJong as a Pro-driver, but he is a regular VRS-simracer. The #92 has Güven, who is a regular with VRS as well. Both DeJong and Güven have done the iRacing Porsche Supercup, together with the rest of the simracers in VRS. #92 also won this in 2020 when it was broadcasted instead of the real Le Mans. They really should be among the favorites.
Aslo #111 Red Bull Racing... 3 sim-drivers and only one Pro? That looks weird. It's a really good line-up, but isn't exactly by the book?
On a sidenote, there is a lot of Norwegians in this race compared to any other real or simulated race I've ever seen (except the Norwegian championships, obviously, d'oh!).

Are there any team or driver streams worth watching outside of the main coverage?
If you have a tolerance for surreal humour and in-jokes, Jimmy Broadbent's stream is the one I'll be watching when not on the official stream. His community can be a bit OTT sometimes, but they really get behind his team-mates when he does an endurance race, and he wears his heart on his sleeve. Plus, if you're watching during the night, while he's asleep, his friend from Oregon, John Bacho, who is an ex-sim racer whose eyesight now reduces his ability to race, takes over the stream, keeping an eye on the car for Jimmy and interacting with the chat.

#56 running last - had a 6 minute penalty for Rene Buttler as team owner not being classified as a Pro, then were squeezed into the second chicane by another GTE, which spun as a result, yet both drivers got a drive through.

There's a reason why the RaceDepartment races at times does go from day to night. It looks great, and even the free mod-tracks can look amazing. There is a couple of rF2 modders who put in a lot of time and work to make the lights on and around the track look awesome. There's even a guy making a Russian track now, who, for some reason, have decided to model every interior-light in the buildings near the track with windows that makes you see the light. Because that makes it look better, more realistic and right.
