I have a copy of the Maurice Louche TdF book which is comprehensive with full results and race reports (in French) for all editions of the event. However there are no full stage results that I can see.
There is a second edition of this book now which claims to be all new so it might be worthwhile contacting the publishers directly to see if they can help with the results you need or point you in another direction.

On another track you could try some of the French magazines. I happen to have some 1982 Auto Hebdo (I was looking for F3 results for that year) and they have results for all the stages for the TdF (1982) so they probably did this every year in the October or November issues. If you want the 1982 data I will gladly send it to you.

I too have the Louche book and as above it’s a good guide to each event listing as follows
Map with all event locations, date: Distance: Number of Stages, speed events races, Tests, Hill climbs, number of entries and number of finishers .
The appendix includes full results and various category results, but no stage results.
Another book worth I have (mainly a picture book) that might be looking at would be the “Echappement Les Grandes Heures de Tour Auto 1958-1980” Seems to be available on French sites.
I’ve acquired some info mainly entry lists etc. but the only stage result I have is for 1973 at the Circuito Montjuic from the amazing “40 Anos de Historia Del Autovilismo en el Circuito de Montjuic” book by Javier del Arco de Izco. He lists the results of the 2 main races for Touring, GT and Sports as well as the 3 Grand National results (lower level TdF). Happy to share.
Also, I would recommend you try the great French historical site “Autodiva Forum”
You’ll have to sign up well worthwhile, there’s some info on Le Tour and if your French is up for it you can ask the French experts!

L'Équipe would probably have the best day-to-day coverage - Auto-Hebdo would just distil everything into weekly summaries - but despite my best efforts I can't work out whether their whole archive is available online or if it's just selected reports on major events. Gallica has all the earliest issues from 1946-54, but those are of course the ones which are out of copyright - which is 70 years in the EU.

As Auto-Hebdo started only in 1976, you might want to look at L'Automobile Magazine where some Auto-Hebdo future members were before it began.
Echappement could be a source, too, although more regionaly-oriented.
Sport-Auto, too, could be interesting.

The Ferrari 250 GT and GTO at the TdF have been featured in detail by Germain Malléjac's various articles in Cavallino, with information also on the competitors, including stage results. Several of the relevant copies are still available directly from the publisher. The magazine's online register of content, however, seems to have gone.
The Swiss magazine Automobil Revue has not been mentioned so far. I never checked the early years, but for the time since the 1950s it can be said coverage is usually good. In German, like other German language magazines online easily available via Zwischengas.com, but you will charged ...

With the focus on the years from 1969, the French magazine Sport Auto should not be left out. On French matters L'Automobile also had a good sports coverage.
