I try to use the GP3 Track Editor, to make super large tracks, such as Nurburgring, Pescara, or a 25 mile oval, however when I create the track and go to race on the race track, the screen suddenly returns to the Windows screen, then I put back the regular track and it is fine.

it's not possible to make tracks longer than 7.9 km.
Before starting with gp3 trackediting I think it's best to read some of the tutorials since they give good info on what is possible and what not and a general idea how to start on a track
